
Beans and quinoa are a great protein combination
Beans and quinoa provide a good complement of amino acids and thus protein. The organic Adzuki beans we provide are quicker to cook than other types of beans.
We use quinoa as the grain because it is an ancient grain and thus hasn't been as genetically modified. It is best to soak the beans for around half an hour or overnight to make them more digestible. We recommend you cook the quinoa separately to the beans.
The six Ayurvedic tastes in this meal
In this dish, there are all six Ayurvedic tastes. Ghee and quinoa provide the sweet taste and the spices provide the bitter and pungent tastes. The beans provide the astringent taste. A squeeze of lemon provides the sour taste.
It goes well with these vegetables
This is a great dish to showcase whatever vegetables are in season. For example, you can airfry some squash or sweet potato to go with it. Or airfry asparagus. Or you can add vegetables to the beans as they cook. If you are in a hurry, simply cook some collard greens, kale or spinach to add with it. Greens only takes a couple of minutes to cook. Ayurveda also recommends cooking them with a few prunes to make them sweeter.
